Quick or simple vegetarian recipes?

You can make a pasta dish or a rice dish, and that will be nice and simple. Or some stir-fried veggies over quinoa. Quinoa makes everything seem a little more elegant! And it goes with absolutely everything.
How fancy will you want to be, and how much from scratch? What is your level of kitchen experience?
Something nice and simple but elegant would be linguini tossed with olive oil in which you sautee some garlic, a pinch of red pepper flakes, some spinach, basil, white beans, and sundried tomatoes. You can soak and cook dried beans or just use rinsed and drained canned ones. Alternately, just sautee up some lovely mushrooms, season with salt, pepper, parsley, and thyme, then deglaze with some marsala wine or just vegetable broth, and toss your pasta with that. Serve it with a side of kale or a salad.
You could go casual and make burritos! Make or buy whole grain tortillas, then either stuff them or let your family stuff their own with mashed sweet potatoes mixed with a little nutritional yeast and lime juice, long grain brown rice cooked with some oregano and cilantro, and refried beans. Refried beans are super easy to make. Sautee some onion, add some cumin and chili powder, then add some cooked (or canned) beans. Mash them up to the texture you want, adding some liquid if necessary. You can use black, pinto, or whatever beans you have on hand. Roll it all up and serve with salsa, hot sauce, and/or guacamole.
Or you could do veggie sushi! Cook up a big pot of short grain rice – white sushi rice is traditional, but I always use brown and it works just fine. Season it with rice vinegar mixed with a little salt and sugar, or just use pre-seasoned rice vinegar. Separately, cut thin strips of lots of veggies. You can use raw cucumber and avocado, pickled daikon (a.k.a. oshinko,) cooked sweet potato, carrot, asparagus, spinach, squash, broccoli stems, or burdock root. Absolutely anything you like! Roll it up in nori seaweed, cut in bite sized pieces with your very sharpest knife. Arrange all prettily and serve with soy sauce or aminos, wasabi paste, and pickled ginger. Start the meal with miso soup – easy to make with seaweed, miso paste, tofu, and dashi stock which you can make vegetarian easily by simply using kelp and no fish.
You could make a big pot of soup, stew, or chili, depending on the veggies and beans you have on hand. Potatoes can make a chunky soup super satisfying, or they can make a pureed soup super creamy and substantial! Black beans make a fantastic southwestern style soup or stew. You can make a black bean soup and then puree half of it for a nice thick, rich, but chunky and awesome soup. Or make chili with your favorite beans and veggies, with plenty of peppers and cumin. Serve with tortillas or chips, fresh cilantro, and some chopped avocado if you like. Dress up a nice chili by baking it with a cornbread topping to make tamale pie! Serve with salad on the side.

Simple Chana Dal Recipe- Indian Food Recipes
Ingredients-
1 cup chana dal
1 onion
1 tomato
1 tsp cumin seeds
1 tsp turmeric powder
1/2 inch ginger
1/2 tsp red chilli powder
1 tsp garam masala
1 green chilli
2 tsp coriander powder
Few coriander leaves
Tamarind pulp
1 tbsp jaggery
1 cup water
2 tbsp oil
Salt to taste
For tadka:
1 tsp cumin seeds
2 red chillies
2 tbsp oil
Preparation-
Heat the oil.
Add cumin seeds, onions, tomatoes and mix well.
Add ginger, coriander powder, red chilli powder, turmeric powder and garam masala.
Add the dal, green chilli, salt, water, jaggery, tamarind pulp and let it cook for sometime.
For tadka – In oil add cumin seeds and red chillies and spread over the dal.

Ok, so I have decided to be a vegetarian and school starts soon. They have salads and all that stuff at my school, but I really don’t want to eat salad everyday. It can be Vegan or Vegetarian I don’t really care.
Most People think Vegetarians are living unhealthy but thats not true. There are alot of recipes exclusive for vegetarians, so you can live with all the vitamines and other stuffs that you need !!
Its important that you eat the right things example tofu is a nice meat alternative.
