Vegetarian Chili
Makes 1½ quarts (1.4 L)

2 ½ tablespoons (37.5 mL) extra virgin olive oil
½ yellow onion, diced
2 garlic cloves, minced
1 poblano pepper, seeded and diced
⅔ cup (115 g) frozen corn, thawed
1 zucchini, diced
1 yellow squash, diced
1 tablespoon (15 mL) cumin
1 tablespoon (15 mL) chili powder
1 tablespoon (15 mL) smoked paprika
2 teaspoons (10 mL) dried oregano
1 teaspoon (5 mL) cayenne pepper
1 (28 ounce, 780 g) cans diced tomatoes
2 cups (475 mL) vegetable broth
1 (15 ounce, 420 g) can white cannelloni beans, drained
1 (15 ounce, 420 g) can black beans, drained
1 (15 ounce, 420 g) can kidney beans, drained
salt and pepper to taste

garnish:
flat leaf parsley, minced

Place oil in a large Dutch oven, over medium high heat.

Add onions and garlic to the pan and sauté for 4 to 5 minutes. Season with salt and pepper.

Add peppers and corn to the pan and sauté for an additional 3 minutes.

Add the zucchini and squash to the pan and reduce heat to medium; sauté for 2 minutes.

Add the cumin, chili powder, paprika, oregano, and cayenne pepper to pan and stir. Cook the mixture for 3 minutes.

Pour the diced tomatoes, with the juices, and the broth into the Dutch oven and stir. Season with salt and pepper.

Simmer the mixture for 30 minutes, stirring occasionally.

Pour the beans into the pot and stir. Simmer for an additional 15 minutes, adjust seasonings, top with minced parsley, and serve with a side of crusty bread.

Do you have any good Vegetarian Chili recipes?

I’m specifically looking for a recipe for vegetarian chili that has a relatively small yield (no more than 4 servings).

Thanks!

If you know how to make regular chili, do everything the same. Or you can look up a recipe. The things you would need to substitute would be: instead of beef broth, use vegetable broth. Instead of meat, use a bag of boca "meat" which is just veggie protein crumbles.

Hope you enjoyed this recipe, Inspired by the chili my mother would make mixed up with the taste preferences of my girlfriend and I.

Tips for making this recipe better:
TIP 1: Start of using less spice, I’d say about half. The current Spice levels lead s for a more spicy taste. I’d say at a medium level. Unless you enjoy spicy food, then just prepare as the video describes.

TIP 2: Make sure to cut your peppers, and celery into small enough pieces so that they cook thoroughly through.

This vegetable chili recipe is an easy meal in one dish that’s hearty and healthy, too.

Hi, I’m Stephanie Gallagher, the Iron Chef Mom, and today, we’re making an easy vegetable chili recipe.

For this recipe, you will need:

2 Tbsp. olive oil
1 large onion, diced
1-1/2 cups diced red, green and yellow peppers
kosher salt and freshly-ground black pepper, to taste
3 cloves garlic, minced
2 cups broccoli florets
8 oz. sliced mushrooms
2 16 oz. jars salsa
1 14 to 16 oz. can black beans, drained and rinsed
1 14 ro 16 oz. can pinto beans, drained and rinsed
1 Tbsp. chili powder
1 Tbsp. cumin
1 quart prepared red pepper and tomato soup or plain tomato soup (not condensed)

Place the olive oil and onions in a dutch oven. Add the peppers, and give the vegetables a stir. Add salt and pepper, and let the vegetables sweat for about 5-8 minutes until softened.

Add the garlic, and give it a good stir. Now add the broccoli, mushrooms, salsa, black beans, pinto beans, chili powder and cumin.

Stir well, then add the red pepper and tomato soup.

Bring to a boil, then reduce the heat to medium-low, cover partially, and simmer for about 15 minutes. Uncover, and simmer until thickened, about 10 more minutes.

Serve the vegetarian chili with shredded cheddar cheese.

How to use dry kidney beans in this chili recipe?

So, can i replace the canned kidney beans with dry ones?? I want to make this for supper today, so I can’t rehydrate the beans because I was told that you have to do that overnight….any suggestions?? Thanks so much!!!!

Suggestions…go to the store and buy a can of cooked red kidney beans!!!

Here is the exerpt from Wikipedia:

"Raw kidney beans, and some other beans, contain the toxin phytohaemagglutinin, which is destroyed by boiling for at least ten minutes. Dry beans must be boiled prior to slow cooking to avoid poisoning. Even a few beans can be toxic, and beans can be as much as five times more toxic if cooked at 175°F (80°C) than if eaten raw"
