How to Cook Broccoli Soup – Healthy Vegetarian Recipe

There are many nutritional benefits of broccoli. Broccoli is nutrient dense and it’s low in calories, one cup is only 45 calories. Brocollu nutrition contains Vitamins C, K, A, B6, B2, E, B1, B3, B5, Folate, Manganese, Fiber, Tryptohphan, Potassium, Phosphorus, Magnesium, Protein, Omega 3 fatty acids, Iron, Calcium, and Zinc.

Broccoli is high in fiber, which helps maintain a healthy gastrointestinal (GI) tract. It also helps in the reduction of cholesterol levels in the blood a great addition to broccoli nutrition

What I did not know about broccolu nutrition is that it contains large amounts of calcium. This helps prevent osteoporosis. Calcium promotes healthy bones as well as helps speed fat burn. It also slows down the body’s production of cortisol, a stress hormone. This has been connected to stomach fat and food cravings.

Broccoli is a good source of folic acid (folate). Folic acid is also needed for the normal growth of tissue. A great source for pregnant women. Vitamin C is a powerful antioxidant and anti-inflammatory. It helps relieve cold symptoms. It helps the body with the absorption of iron.

Palak Dal – Spinach Dal – Paalakura Pappu – Indian Vegetarian Recipe

Description: This is one of the easy healthy dish and a rich source of protien for vegetarians.
It tastes great when served with a dollop of ghee on hot rice, Chapathi,Phulka, Roti, Paratha.

Serves : 2 persons

Ingredients:

Toordal (Split Pigeon Peas) -1/3 cup (washed andd soaked in clean water for about 15 min)
Spinach (washed and finelu chopped) – 2 cups
Green Chillies – 5 no (finely chopped) or to taste
Onion (finely chopped) – 1/2 cup
Dry Red Chillies – 2 (broken into 2)
Mustard seeds – 1/4 tsp
Cumin seeds – 1/4 tsp
Curry Leaves – 1 sprig
Garlic – 1 clove(finely chopped)
Salt -to taste
Hing -1/8 tsp
Butter or Ghee – 1 tsp
Oil -1 Tbsp
Water -1 1/2 cups

Procedure :
Step 1 : Into a pressure cooker add the soaked dal, Spinach, Onion and Green Chillies and add about 1 1/2 cups of water.
Step 2 : Turn on the stove and pressure cook all of them till three whistles.
Step 3 : Rest the Pressure cooker till all the pressure goes down by itself.
Step 4 : Open the pressure cooker lid add salt then again bring the entire mixture into a rolling boil.
Step 5 : Mash the Dal little bit if required.
Step 5 : Meanwhile let’s do the seasoning.
Step 6 : In a small pan add oil and turn on the heat wait till the oil is nice and hot
Step 7 : Add mustard seeds wait till they start popping then add cumin seeds wait till they turn golden brown then add garlic, curry leaves, turmeric powder, red chillies and Hing
Step 8 : Saute it and immediately add the seasoned oil (tadka) into the boiling dal.
Step 9 : Add ghee on top of the Dal.
Step 10 : Serve it with Rice, Roti, Paratha, Phulka and enjoy.

Palakoora curry (Spinach Stir Fry) Palak curry – Indian Vegetarian Recipe

Palakoora Pulusu Koora

Description : This is a great alternative to the regular dal recipe. A great blend of dal and greens.
So here is the easy tasty and healthy recipe I make for atleast every two weeks.

Serves 3 to 4

Ingredients :

Spinach – 1 bunch or 5 cups
Onion (chopped) – 1 heaping cup
Moong Dal – 4 Tbsp
Cumin Seeds – 1/2 tsp
Mustard Seeds – 1/2 tsp
Tamarind – lime size ball
Curry Leaves – 1 sprig
Oil – 2 Tbsp
Salt – to taste
Red Chilli Whole (broken) – 2
Green Chillies (chopped) – 2 Tbsp or to taste
Ginger (grated)- 1 tsp
Garlic – 2 big cloves

Procedure :
Step 1 : Soak Moong Dal for atleast half an hour
Step 2 : Heat a pan and add oil, when the oil is hot add mustard seeds, cumin seeds, curry leaves, red chilli whole.
Step 3 : Add Ginger garlic green chillies and cook till all the raw flavour of the ginger garlic is lost
Step 4 : Add onion and 1/4 ttsp of salt and reduce the heat between MEDIUM to LOW, cover and cook till the onion turn tranperant.
Step 5 : Add spinach and tamarind and cover it to cook till the dal and spinach are cooked well.
Step 6 : The dal will be cooked from the moisture that is oozed from the Spinach if not add extra water to cook the dal. Cook for 7 to 10 min covered, keep stirring once in a while, take care not to burn anything.
Step 7 : Add salt to taste and open the cover and cook for another two min till all the water is evaporated and everything is cooked well.
Step 8 : Serve it hot with rice.
